Simple, Quick & Easy Creamy Mushroom Spinach Pasta Recipe

If your family loves mushrooms like mine, then they will surely love this simple and easy to make creamy mushroom and spinach pasta dish.

I’m a single mom to four girls and a lot of the recipes I share on here happened because we needed to use up what we had in our fridge and cabinets. Thus, our creamy mushroom & spinach pasta was born.

Don’t get me wrong, we are never without but what we do have may not be exactly what we are craving. So, we get creative and whip up something delicious as a result, well most of the time anyway. Don’t be afraid to use what you have, substitute for different ingredients, and make it your own.

You don’t need any fancy kitchen tools to make this simple dish. Here’s what you will need:

Budget friendly creamy mushroom & spinach pasta

This dish is SO easy and simple to make.

First, melt butter over medium heat. Add in onions. When onions are almost tender add in minced garlic.

Second, add mushrooms to the onions and garlic. Cook for a few minutes, stirring consistently.

Third, add in cream cheese. Slowly add in the heavy cream. Stirring to blend the cream cheese and heavy cream together.

Fourth, stir in spices, salt & pepper to taste, and spinach.

Fifth, slowly add in chicken broth. Do this slowly, you may not need to add in the full cup of broth. If you like a thicker cream sauce add less broth. If you want a slightly thinner sauce add more chicken broth to your sauce mixture.

Sixth, bring to a simmer then reduce heat.

While creamy mixture is simmering cook the linguine noodles till tender.

Combine noodles and cream sauce in a serving dish or serve straight from the cast iron skillet (this is what I would typically do). Serve on its own or with a freshly baked (or store bought) French loaf bread.

My girls LOVE this dish so much that they literally argue over the leftovers!

Ingredients
  

  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 4 oz cream cheese
  • 1 cup thawed chopped spinach
  • 8 mushrooms, sliced
  • 1 package linguine
  • 1 small diced onion
  • 1 tbsp minced garlic
  • 2 tbsp butter
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • salt & pepper to taste
  • parmesan cheese & parsley to garnish

Instructions
