One Skillet Creamy Mushroom and Broccoli Pasta- 30 minute Recipe

I don’t know about you but my youngest daughter ALWAYS wants pasta for almost every meal. Breakfast…asks for pasta. Lunch…wants to take leftover pasta. Dinner…you guessed it, PASTA!

While my heart does love it a giant helping of the cheesiest pasta I try to come up with different ways to serve up the carb filled dish that my kiddo is craving. For this dish, it really wasn’t what her tastebuds were after BUT once she tried it she loved it AND even got herself seconds.
If you have 30 minutes to devote to being in the kitchen this dish is one worth trying.
What ingredients you need to make one skillet creamy mushroom & broccoli pasta
- 2T butter
- half medium onion, diced
- 4 cloves of garlic minced
- 8-10 small/medium sliced mushrooms
- 12 oz frozen chopped broccoli
- 1 bag frozen tortellini, I used cheese
- shredded mozzarella cheese
- 8 oz cream cheese
- 1 cup milk
- 1 cup of chicken broth
- 1t basil
- 1t oregano
- 1t garlic powder
- 1t onion powder
- 1/2t salt
- 1t pepper
- 1/2t chilli powder
- 1t Italian seasoning
Kitchen tools you need to make one skillet pasta dish
Start by heating up your skillet on medium heat. I love cast iron and have been using my skillets for 20+ years so that’s what I recommend. Once your skillet is heated toss in your butter and melt it.
After your butter is melted, add in the minced onions. Wait just a couple of minutes then add in the garlic. This is just how I do it, you can add them both at the same time if you prefer.
Once your onions are tender you want to add in the cream cheese, stirring constantly as you add. Then once that gets a good creamy consistency add in the heavy cream and milk.
Turn the heat up slightly then toss your spices in and stir well. Your sauce should be pretty creamy at this point.
Next, add in your sliced mushrooms and frozen chopped broccoli. Add in 1/2 cup of the chicken broth. Give that a good stir to combine. Let simmer for few minutes then turn the heat down to a medium low.
Add in the frozen tortellini. Again, give it a good stir to combine. You want the sauce to completely cover all the things. Slowly add in more chicken broth if needed. Cook for approximately 5-6 minutes.
Turn on your broiler.
Once you are happy with the thickness of your sauce top your one skillet dish with shredded mozzarella. Pop it in the broiler for 5-10 minutes. This will not take long.
When the mozzarella is a beautiful golden brown on top of your creamy mushroom broccoli tortellini take it out of the oven. Let is rest for a few minutes then it’s ready to serve.
No pasta dish is complete without breadsticks, not in my house anyway. Serve with your favorite frozen or freshly made breadsticks.

- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp chili powder
- 1 Tbsp Italian seasoning
